Our Famous Wiltshire Hams A tradition perfected

In 1841, Elizabeth Harris of Calne, Wiltshire, pioneered a gentler curing method, immersing pork legs in brine for a milder, more delicate flavour.

We continue that tradition, curing whole British pork legs for almost a week in our own-recipe brine, enriched with unrefined brown sugar for subtle sweetness. The result is tender, succulent ham with a mild, well-rounded flavour, perfect for everyday meals or special occasions.

Our Wiltshire hams come unglazed, ready for you to add your own festive flourish. Whether a golden breadcrumb coat (not supplied) or a glossy glaze of your choice, our famous hams make a stunning centrepiece for any seasonal table.

Cherry & Port Glazed Ham with Cheese & Ham Wreath

1 tbsp Dijon mustard

2 cloves

2 x 320g All-butter ready-rolled puff pastry

198g DukesHill Fig Chutney

100g grated DukesHill Comté Cheese

100g DukesHill Honey Baked Baby Ham, thinly sliced

1 egg, beaten

Fresh rosemary sprigs (optional garnish)

20g DukesHill Gran Moravia Cheese & Chilli Sablés, crumbled

Preheat oven to 180°C. Place the ham in a roasting tin and score the fat in a neat diamond pattern.

In a small pan, warm the cherry & amaretto jam, port, mustard and cloves until slightly thickened and glossy. Brush half over the ham, reserving the rest. Roast for 30–45 minutes, basting every 15 minutes, until sticky, golden and caramelised. Rest.

For the wreath, join the two puff pastry sheets on the short side to make a long rectangle. Spread with fig chutney, top with sliced ham, then scatter over cheese. Roll up along the long edge, join the ends to form a wreath, then cut slits around to let steam escape and fan the pastry. Brush with beaten egg and sprinkle with sea salt.

Bake at 190°C for 20 minutes, brush again with egg, then bake for another 20 minutes, loosely covering with parchment if needed.

Cool slightly, transfer to a platter, then thinly slice the glazed ham and arrange inside the wreath, with the rest piled in the centre. Garnish with rosemary sprigs and crumbled sablés.

1 tbsp olive oil

2 sprigs of fresh thyme

1 tbsp honey

500g leftover cooked root vegetables (e.g. potatoes, parsnips, carrots, finely chopped)

75g leftover cooked brassicas (e.g cabbage, Brussels sprouts, sliced)

2 tbsp DukesHill Bacon Jam

1 tbsp DukesHill Piccalili

4 DukesHill Pickled Shallots, sliced

150g Cooked DukesHill Ham, diced

50g DukesHill Isle of Mull Cheddar, diced + 50g grated

198g DukesHill Boxing Day Chutney (plus extra to serve)

320g sheet ready-rolled puff pastry

Cocktail nuts, chopped (optional garnish)

Line a tray with parchment, brush with oil and scatter with thyme. Spread Boxing Day chutney over the base, then drizzle with honey.

In a large bowl, mix the root vegetables, brassicas, ham, bacon jam, piccalilli, shallots and diced cheese. Season well, then press over the chutney and top with the remaining cheese. Cover with puff pastry, tucking in the edges to encase. Prick with a fork and bake for 25–30 minutes until golden and crisp. Rest for 3 minutes, then flip to invert onto a serving plate and peel away the parchment to reveal the glossy chutney layer. Garnish with cocktail nuts and rocket. Serve hot or cold.

Tracked Delivery

Email updates and tracking for complete peace of mind

Can I make changes to my order?

You can make changes to your order until the end of November. We are unable to make changes to orders in December due to many of our items being freshly made to order.

Can I track my delivery?

Yes, you’ll receive courier emails with a tracking link and regular updates. Tracking may not be available with some carriers in remote areas.

Do I have to be at home to receive my delivery?

No. Couriers are instructed to leave parcels in a safe place (e.g. porch, garage, shed, or with a neighbour) to keep your fresh products secure.

What time will my order arrive?

Delivery times can’t be guaranteed, especially in peak season. Please contact us promptly if your parcel hasn’t arrived when expected.

Ordered a Turkey or Goose?

Your bird will be delivered fresh from the farm on 22nd December, sent separately from the rest of your order.
