Building a Foundation That Feeds Hope GUY FIERI:

Guy Fieri has always been larger than life. With his spiky blonde hair, bold catchphrases, and love for taking diners on unforgettable journeys, he’s become one of the most recognizable food personalities in the world. But beyond the flames of the grill and the neon lights of Flavortown, there’s another side of Guy that many fans are only beginning to see: the philanthropist dedicated to serving communities in crisis, honoring everyday heroes, and inspiring the next generation.

That mission comes to life through the Guy Fieri Foundation, an organization that’s steadily grown from a vision rooted in family values into a national force for good. And while the Foundation may carry his name, its DNA comes from something far deeper.

“I wouldn’t say the inspiration came from any one particular moment or event in my life,” Fieri said. “The concept of giving back was instilled in me from day one by my parents,

Jim and Penny. Throughout my childhood, I remember how involved they were in our small rural community, and those lessons stuck with me. As my platform and voice have grown, so have my ambitions for the Foundation.”

That foundation of family values has become the springboard for Guy’s philanthropic mission: to show up where people need help most, and to remind communities of the power of food, generosity, and connection.

Feeding Hope in Times of Crisis

If there’s one arena where the Guy Fieri Foundation has become especially visible, it’s disaster relief. With specially equipped trailers designed to bring hot meals and comfort to communities hit by wildfires, hurricanes, floods, and other crises, the Foundation has turned the act of sharing food into an act of healing.

For Fieri, the motivation doesn’t come from a single dramatic event. It is the result of countless small moments he’s experienced while serving on the frontlines. “Something as simple as handing an exhausted firefighter a hot cup of coffee or meal can be so powerful,” said Fieri. “Seeing the comfort it brings them is enough to keep me driven to continue building this Foundation and supporting those who do so much for us.”

That philosophy—one meal, one person, one act of kindness at a time—underscores the Foundation’s work. And it’s expanding. In 2025, the Foundation added a new disaster relief trailer in Florida, complementing the existing one on the West Coast.

There’s no shortage of need across this country and the aim is to always be prepared for whatever comes next. Thanks to the generosity of donors, the program has

continued to expand and is looking to position additional trailers in other hubs around the country. This growth means that when the next storm or wildfire strikes, the Foundation can deploy more quickly, reaching people in need with both nourishment and hope.

While disaster relief has been a cornerstone of the Guy Fieri Foundation, another initiative close to Fieri’s heart is Serving Those Who Serve Us. This program honors military members, first responders, and everyday heroes who put their lives on the line for others.

“Spending time in both California and Florida, from fires to hurricanes, I’ve seen a lot of selfless acts from these heroes and I just want to support them in any way we can,” said Fieri. “I’ve always been a huge supporter of our military as well. All of these heroes are there for us when we need them, so for me, it’s all about being there for them.”

Through this initiative, the Foundation not only provides meals but also recognition, events, and moments of gratitude that remind these heroes their sacrifices don’t go unnoticed.

Inspiring the Next Generation

Beyond responding to emergencies, the Guy Fieri Foundation also looks to the future. Its culinary arts programs aim to inspire young people to explore food not just as a career path, but as a life skill and a tool for connection.

“Food is the common denominator of all people,” said Fieri. “And I believe that having a healthy relationship with and understanding of food and how it’s prepared is extremely valuable.” It goes beyond becoming a chef or making a career in food service. It’s about providing for yourself and your family, gathering with your friends, making nutritious choices and having a well-rounded relationship with food.

These programs echo Fieri’s own career trajectory. While he’s become a global ambassador for food, he never loses sight of the simple, personal role it plays in everyday life through feeding loved ones, building traditions, and sharing joy. By helping students cultivate that relationship, the Foundation is planting seeds that will bear fruit for generations.

The Foundation’s impact is felt not only in the immediate aftermath of crises but also in the ripple effects it creates. By modeling service, Fieri hopes others will follow suit. “It’s not just about helping today but inspiring people to jump in and give back where they can down the road,” said Fieri. “If we can inspire folks across the country to lend a helping hand when their communities are in need, much like my parents did for me, it’s a huge win.”

And at the heart of it all is food. Whether it’s a holiday meal shared in a shelter after a storm, or a group of students learning to cook for the first time, food becomes the bridge between people. Guy believes in food’s ability to bring people together in good times and in tough times; choosing to embrace them all.

The Power of Partnerships

Running a foundation of this scale requires collaboration and Fieri is quick to point out that the Guy Fieri Foundation is far from a solo act. From disaster relief groups like Operation BBQ Relief to organizations like Tunnel to Towers, Best Buddies, the Salvation Army, and the Redwood Empire Food Bank, the Foundation works hand in hand with partners who share its mission. Fieri believes it’s a privilege to join forces with such worthy people and causes.

“The more great people we can work with, the better,” said Fieri. “Not all foundations have the same mission but a lot of times we can come together and support each other’s missions even if they are a bit outside of our scope.”

This collaborative spirit reflects both the mantra and humility of the Foundation, which recognizes that no single organization can solve every problem. But together, they can make a real difference.

All the Ingredients of a Lasting Legacy

For someone whose public persona has long been tied to food television, restaurants, and culinary culture, it would be easy for Fieri’s legacy to rest on his contributions to the world of dining and entertainment. But he’s thinking much bigger.

“I want people to remember me the way I think about my parents,” said Fieri. “As somebody who cares about and serves his friends, his family, his community, and the world at large. Nothing more, nothing less.”

Guy Fieri may forever be remembered as the “Mayor of Flavortown,” but the city he’s most passionate about building is one rooted in compassion and generosity. Through disaster relief trailers, programs for first responders, partnerships with national nonprofits, and culinary initiatives for students, the Guy Fieri Foundation is writing a story of resilience and service.

And like a good meal, it’s meant to be shared.

The Foundation’s work demonstrates that giving back doesn’t require celebrity status. It’s about intention, community, and heart. Just as his parents instilled in him, Fieri now pays forward the lesson that service is a way of life. Chef Sarah Thompson brings bold flavors to Casa Playa

Mention seafood to James Beard finalist Sarah Thompson and her face lights up. It’s a topic, not surprisingly these days, that has the accomplished chef beaming with excitement ever since she took over the kitchen of Casa Playa inside Encore Las Vegas to bring a big, bold coastal Mexican cuisine experience to the resort.

The menu draws inspiration from the Baja Peninsula and Oaxaca with a focus on bright and refreshing seafood dishes, while mixing in seasonal ingredients with an in-house masa making program. Diners will also find dishes dedicated to the flavors of Mexico City–one of Thompson’s favorite food cities.

Thompson, a 2025 James Beard Award finalist for Best Chef Southwest, developed her love for Mexican food in New York City after she left Michelin-starred Marea to join the team at Cosme, where she learned the intricacies of elevating Mexican food.

“That opened my eyes to a different culture and a cuisine that spoke to me,” she says. “Each region is so specific–the food in Mexico City is different from what you’ll enjoy in Oaxaca.”

Before opening Casa Playa, Thompson made multiple trips to Mexico to research regional cuisine and to get ideas for the playful, artistically plated dishes now found on the menu. That means blue shrimp ceviche, Hokkaido scallops with roasted carrot pipián, huitlacoche esquites and epazote, and oysters topped with a prickly pear mandarin mignonette, which can be found under the crudo portion of the menu next to the largeformat dishes meant for sharing.

“I’m proud of my team and the work they put into each dish, and my hope is that our guests see and taste that through our cooking and want to come back for more.”

“We wanted to set the tone for our guests and encourage them to enjoy our menu with a group,” Thompson says. “Plates like the tableside salsa service and the whole roasted carnitas feel communal, reflecting a family-style experience that starts in our kitchen and (we hope) extends to every one of our guests. Other dishes, like our La Flama Blanca dessert, have dramatic presentations that feel interactive and memorable.”

She continues, “Seasonality plays a big role in our menu development. I have such an affinity for vegetables and get elated once new ingredients become available,” Thompson reveals. And while the Las Vegas climate doesn’t allow for much agriculture, she sources fresh produce from farms across Nevada, California and Arizona. Seafood, meanwhile, is reeled in from just off the Pacific Coast including striped bass from Baja California and oysters plucked from Tómales Bay.

Some of Casa Playa’s other stellar signature dishes include pork belly al pastor, a large-format dish served tableside with roasted baby pineapple and housemade tortillas and salsa, and octopus braised and slowly cooked for tenderness and served with a coloradito mole.

“Coloradito means ‘a little bit of color,’ so similar ingredients to a mole rojo are cooked for less time,” Thompson explains. “It is rich, nutty, slightly sweet, but has a beautiful, warming spice to it from the variety of chiles. The way we cook our octopus balances nicely with the mole and the tangy potato escabeche.”

Thompson is also one of the only restaurants in Las Vegas with its own masa program. A partnership with Masienda helps

source and bring in several distinct varieties of corn from small producers in Oaxaca and a dedicated team turns between 50 and 75 kilos a day into fresh corn tortillas.

The artistry of the food pairs well with the vibrant, burnt oranges of a dining room that visually brings to mind a fiery beach sunset. Guests are greeted in dramatic fashion by a giant Olmec head sculpture in a corridor lined with large stone plinths and tropical foliage.

“We conceptualized the interiors as a way of transporting guests to coastal Mexico, while celebrating the country’s spirit through rich hues, painterly walls, and lively patterns, as well as curated art pieces and contemporary furniture that honor Mexican craftsmanship,” says Todd-Avery Lenahan, President and Chief Creative Officer of Wynn Design & Development. “These elements come together to encapsulate the essence of the country, providing a foot-in-the-sand resort style experience. The intention was to create a candlelit coastal escape that embodies the essence of Mexico–bright, spirited and festive.”

The design, Thompson says, perfectly matches the Casa Playa concept.

“I want our guests to absorb the complete experience, from the ambiance to the food to the cocktails designed by Mariena Mercer Boarini [Master Mixologist of Wynn Resorts North America],” Thompson says. “I’m proud of my team and the work they put into each dish, and my hope is that our guests see and taste that through our cooking and want to come back for more.”

Featured at Costco Warehouse Roadshow for Labor Day Weekend Launch

Over Labor Day weekend, David Dobrik debuted his new snack brand, The Original Doughbrik’s Snacks, WAVERS, at the Costco Warehouse Roadshow in Leesburg, Virginia and in Teterboro, New Jersey.

At the Leesburg location, Dobrik spent several hours greeting Costco members, taking photos, and engaging with the sampling team as they introduced shoppers to his bold, crunchy, pizza-inspired snacks. The exclusive 18-ounce, club-size bags drew enthusiastic crowds eager to try the new lineup.

Simultaneously, WAVERS made its presence known at Costco’s Teterboro, New Jersey warehouse, ensuring fans on the East Coast could also take part in the launch excitement. Members—and plenty of Dobrik’s fans—lined up for a taste of all four signature flavors: Spicy Pickle, Hot Honey, Late Night Pizza, and Extra Cheesy.

The festivities capped off a busy week for Dobrik. Just one day before the roadshow, he visited the WAVERS factory in York, Pennsylvania, where he helped prepare product bags for the Costco run and even packed pallets himself to get them ready for the warehouse floor.

The launch blended celebrity excitement with Costco’s signature sampling experience, making for a fun-filled, flavor-packed weekend for shoppers.

Señor Rio Tequila isn’t just a premium spirit—it’s a deeply personal story of love, loss, heritage, and resilience, poured into every bottle. COLA-BRAISED SHORT RIBS

Serves 4 to 6

Coca-Cola is my emotional support drink while I’m recipe testing. When I’m deep in the process of developing recipes or writing, it’s my little pick-me-up—a treat for all my hard work. While I was working on a short rib recipe that called for red wine, I realized that I had run out. I looked at the can of cola in my hand, shruged, and thought “YOLO” as I poured the entire can into the mixture and continued to cook, not entirely sure of what the outcome would be. To my surprise, the result was a sweet and sticky braised short rib recipe that not only exceeded my expectations but also paired perfectly with a serving of white rice.

Short Ribs

3 tablespoons vegetable oil 1 tablespoon dried oregano

1 tablespoon adobo seasoning 1 tablespoon sweet paprika

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons kosher salt 1½ teaspoons dried thyme 1 teaspoon ground cumin 3 pounds beef short ribs

½ cup diced yellow onion

3 garlic cloves, minced (about 1 tablespoon)

4 cups beef broth

1 (12-ounce) can Coca-Cola

2 sprigs sage

1 sprig rosemary

1 sprig thyme

Gravy

4 tablespoons (½ stick/2 ounces) unsalted butter

¼ cup all-purpose four

½ cup Coca-Cola

2 tablespoons dark brown sugar 1 teaspoon burnt sugar syrup

¼ teaspoon kosher salt Freshly ground black pepper

Classic White Rice (page 140), for serving Finely chopped fresh chives or fresh parsley, for serving

Season the short ribs: In a small bowl, mix together 1 tablespoon of the oil, the oregano, adobo seasoning, paprika, garlic powder, onion powder, salt, thyme, and cumin until a paste-like mixture forms.

Rub the spice mixture all over the beef short ribs. Cover and marinate in the refrigerator for at least 2 hours or overnight for the best favor.

Cook the ribs: Preheat the oven to 325°F.

In a medium Dutch oven or heavy ovenproof pot, heat the remaining 2 tablespoons oil over medium-high heat until hot. Working in batches to avoid overcrowding, sear the ribs on all sides and brown for 3 to 4 minutes on each side, until they are golden brown. Transfer the ribs to a plate and set aside.

To the same pot, add the onion and cook, stirring frequently, for 3 to 4 minutes, until sofened. Stir in the minced garlic and cook for 1 minute, stirring frequently, until fragrant. Stir in the beef broth, 2 cups water, and the CocaCola. Add the sage, rosemary, and thyme. Return the ribs to the pot, adding more water if necessary to make sure they are submerged in the liquid.

Cover the pot and transfer to the oven. Cook for 2 to 3 hours, or until the ribs are tender and falling of the bone. Transfer the ribs to a plate and set aside.

Use a fne-mesh sieve to strain the warm liquid from the pot into a large heatproof bowl.

Make the gravy: In the same pot, melt the butter over medium heat. Whisk in the four and cook for 1 minute until lightly golden. Whisk in 3 cups of the strained cooking liquid and the Coca-Cola. Add the brown sugar and burnt sugar and whisk for 5 to 7 minutes, until the gravy thickens. Season with the salt and pepper to taste.

Serve the short ribs with plenty of gravy over rice. Finish with chives or parsley.

CRÈME BRÛLÉE SWEET POTATO PIE

Makes 1 9-inch pie

Afer a while, I felt like the sweet potato pies I was trying—and even the ones I was making—lacked creativity. No wow factor, no “ooh la la.” I knew the pie needed something more, something exciting. How could I hook it up? I love anything with texture, so adding a crème brûlée twist with a caramelized sugar topping was exactly what it needed. Tat crunchy top, paired with the creamy sweet potato flling? Now that is the wow factor. Plus, torching the top is a fun party trick that’ll have everyone impressed—it’s defnitely worth the $8 kitchen torch from Amazon. But if you don’t have a torch, no worries—I got you. You can still pull this of with your broiler and give your sweet potato pie that next- level shine.

3 pounds sweet potatoes, unpeeled 9 tablespoons

(4½ ounces) unsalted

butter, at room temperature

1¼ cups packed dark brown sugar 1½ tablespoons vanilla extract

3 large egs, at room temperature 1 teaspoon ground cinnamon

½ teaspoon ground allspice

½ teaspoon ground ginger

¼ teaspoon ground cloves

¼ teaspoon ground nutmeg

½ cup heavy cream, at room temperature

½ cup spiced rum, such as Captain Morgan

1 (9-inch) unbaked pie shell

¼ cup raw cane sugar

Preheat the oven to 350°F.

Bake the potatoes: Place the sweet potatoes in a 9 × 13-inch baking dish. Bake for 45 minutes to 1 hour, until forktender. Let them cool slightly, then carefully peel them and use a fork or potato masher to mash the potatoes in a large bowl until smooth.

Make the pie flling: In another large bowl using a hand mixer (or in a stand mixer ftted with the paddle attachment), cream together the butter and 1 cup of the brown sugar on low speed for 2 to 3 minutes, until light and fufy. Add the vanilla and mix until combined.

Add the egs, one at a time, and mix on low speed until incorporated. Add the cinnamon, allspice, ginger, cloves, and nutmeg. Mix on medium speed for 1 minute, until well combined.

Mix in the heavy cream and spiced rum on medium speed until well combined, 1 to 2 minutes. Switch to a spatula and gently fold in the mashed sweet potatoes until just combined. If the mixture appears uneven with some curdled white spots, don’t worry, it will bake just fne.

Bake the pie: Pour the sweet potato flling into the pie shell and smooth the top with a spatula. Bake for 45 minutes, until the flling is set and the crust is golden brown. Allow the pie to cool completely, 2 to 3 hours.

When the pie has cooled and you’re ready to serve, sprinkle the raw sugar evenly over the top. Use a kitchen torch to caramelize the sugar until it turns dark brown and bubbles, 1 to 2 minutes, or place the pie under the broiler for 1 to 2 minutes. Slice and serve.

In the restaurant business, first impressions aren’t just important, they’re everything. That truth has only sharpened in today’s off-premises market, where many guests discover restaurants exclusively through thirdparty delivery apps. Instead of a warm welcome at the restaurant’s entrance, or a beautifully plated appetizer in a cozy ambiance, the first customer interaction is often now a to-go bag left on the doorstep.

For operators, the stakes are clear. The first few bites can make the difference between gaining a loyal customer and losing them to a competitor. One soggy, disappointing meal is often all it takes to lose them for good.

Off-premises dining is here to stay, as consumers appreciate the convenience of pushing a few buttons and having food arrive at home ready to eat. Restaurants are responding by expanding to-go options, but with

many guests’ first impression now happening through a to-go bag instead of a dining room, the experience must travel just as well as it would being passed across the table.
