Roman trattoria brings authentic flavors of Rome and Neapolitan-style pizza to Chicago’s western suburbs
Cooper’s Hawk Winery & Restaurants has opened the second U.S. location of Piccolo Buco in Naperville, Illinois, following the success of its Oak Brook debut. A third location is already planned for Schaumburg in 2026.
Piccolo Buco, created in collaboration with Chef Luca Issa of the original Roman trattoria in Italy, transports guests to Rome with its distinctive atmosphere and menu. Founder and CEO Tim McEnery discovered the concept while traveling in Rome and sought to bring its one-ofa-kind pizza experience to Chicagoland.
Located in the Block 59 development, the Naperville restaurant offers 195 seats, including 68 on an enclosed patio reminiscent of a Roman bistro. Design highlights include ornate ceiling stenciling, custom wallcoverings of iconic monuments, vintage gallery walls, and playful nods to the Trevi Fountain.
The menu features Chef Luca’s signature “Red, Yellow or White” pizza, celebrated for its tall, crown-like crust, alongside Roman favorites such as Cacio e Pepe, Truffle Fondue Cappellacci, and Braised Short Ribs. Starters include Mama Luca’s Meatballs and Crispy Stuffed Squash Blossoms, with desserts like Tiramisu and Raffaello Gelato.

Since 1960, Fox Valley Fire & Safety has proudly focused on serving the needs of its customers. What began in a basement with one truck selling and servicing fire extinguishers has grown into a company with more than 100 service vehicles, over 300 employees, and a 46,000 sq. ft. headquarters. A true measure of a great company is the loyalty of its people, and at Fox Valley Fire, employees often stay until retirement. Recently, the team gathered to celebrate one such milestone: the retirement of longtime marketing director Deb Chin . Deb’s career was honored with a special luncheon and a fabulous cake.
This is a candy lovers paradise. They have a huge assortment of gummi bears, even chocolate covered ones. You can even request just one specific flavor. They have plenty of chocolates, nut mixes and gift items. If you buy in bulk, you can get to try more candy. Plus, you can ask for samples. I picked up some milk chocolate, dark chocolate and yogurt covered pretzels. I also bought a few pieces of chocolate almond butter crunch and a few containers of the fall gummi pumpkins that were already packaged and came with an orange bow.
FLIPS • 340 Roosevelt Rd. GLEN ELLYN, IL 630-469-5828. They have been around for over five decades. The menu is huge; they have burgers, BBQ, chicken, hot dogs, Italian beef, gyros, Philly bowls, salads, souvlaki, specialty dinners, steak sandwiches, subs, and so much more. I tried their Fliprib sandwich, which was topped with onions and pickles. The bread, the sauce and the meat were so delicious. I also tried the pork souvlaki with Greek potatoes, which was tasty. The staff there were so nice. I was eyeing the burgers on the menu, which I definitely will order next time I stop by.
KUPPIE’S BAKERY • 42 S. Villa Ave. VILLA PARK, IL 630-832-0929. This is a small bakery located in a strip mall. The cases are filled with fresh baked goods including coffee cakes, doughnuts, cupcakes, Danish and croissants. My friends picked up a few croissants including a fried croissant and a couple cherry turnovers. I picked up a blueberry Danish and a donut filled with raspberry jelly. We couldn’t wait to try our goodies, so we sampled them right away in the parking lot. They were fresh and delicious! The person in the car next to us was doing the same thing – eating his treat in the car.
NONNA SILVIA’S TRATTORIA & PIZZERIA • 1400 Canfield Rd. PARK RIDGE, IL 847-292-9970. I’ve had a few people recommend this place to me, and I’m so glad they did. This is an outstanding Italian restaurant; the atmosphere is lovely and the food is amazing. On the menu they have pizza, homemade pasta dishes, chicken and veal entrées along with fresh salads and sandwiches. I dined outside on the patio. For starters, I had the Aranchi rice balls and an order of house made meatballs. For my entrée I had the Heritage Pork Chops with Vesuvio potatoes.
TANGLED ROOTS CRAFT BEER & KITCHEN • 140 Washington Square, WASHINGTON, IL 309-388-2300. Tangled Roots is all about high quality menus paired with authentic locallybrewed craft beers, in a relaxed small-town setting. I started by ordering a Kit Kupfer amber ale, which was one of the specialty beers on tap. For my meal, I had the Korean BBQ Chicken & Waffles, which was Korean barbecued fried chicken, sunny side up egg, pickled green onion, carrots, spicy maple glaze, spicy siracha aioli, and belgian waffles. Delicious! They have other locations in Illinois.
WING IT ON! • 333 S Schmale Rd, CAROL STREAM, IL 630-456-4513. This is a place that serves chicken wings, tenders, chicken sandwiches, loaded fries and more. I ordered 10 wings with fries and a drink. The wings can be tossed with your choice of sauce and you can split the sauces between your order. Half of my wings were Honey Blues (honey heat mixed with blue cheese), and the other half were Garlic Parm. All the wings had a lot of flavor and were spiced just right. It’s no wonder their sauces have won awards.

Thanksgiving is a time for gathering with family, celebrating our blessings, and enjoying a culinary masterpiece, but it’s time to shake up the old tradition and enjoy something special.
Duck is the poultry of choice which provides a more forgiving culinary experience and has a richer, more sophisticated flavor that elevates the holiday meal.
Unmatched Flavor and Richness: Duck’s succulent red meat is more similar to a high-end cut of steak and is naturally more flavorful and elegant than turkey, providing a savory holiday treat that stands on its own.
Crispy, Golden Skin: The secret to a perfect roast duck is the incredibly crispy skin, which renders during cooking to create a flavor turkey can’t match.
A “Wow” Factor: Serving a perfectly roasted duck signals a different kind of Thanksgiving – one that is elegant, bold, unique, and a feast for the eyes.
Joe Jurgielewicz & Son, Ltd. –a leading purveyor of Pekin duck to the restaurant and foodservice industries across the nation and in select international markets – offers all-natural, fully roasted duck halves that are ready-to-serve within 15-20 minutes of heating. Perfect for a Thanksgiving celebration of any size that will leave guests asking for more.

Although most Americans have heard of sugar plums thanks to the famous holiday poem A Visit from St. Nicholas by Clement Clarke Moore, many have likely never have had the pleasure of tasting one of these luxuries, or even know what they really are (hint: they are not sugar-dusted plums). This is because sugar plums are one of the Gilded Age era holiday sweets that got eclipsed as America moved into the twentieth century. But The Gilded Age Christmas Cookbook will bridge the past and present, bringing back sugar plums and other confections not typically found in modern cookbooks, while revisiting some beloved favorites.
With origins that date back to the nineteenth century and even earlier, the recipes in The Gilded Age Christmas Cookbook have been adapted for today’s ingredients and appliances, allowing cooks to recreate them in their own modern kitchens. Each recipe will provide a colorful glimpse into the era, featuring the fascinating history behind each cookie, its ingredients and baking methods. There will also be sidebars throughout, offering tidbits of Christmas lore of the era.

Daybright comes amid a surge in quickservice chains entering the beverage market, with chains like McDonald’s, Taco Bell and KFC unveiling their own drink-focused brands.

Food Industry News is proud to celebrate longtime subscriber and Jimmy John’s franchise owner, Frank Good, who recently became the proud owner of a custom-built Cotton Gin Smoker – one of the first of its kind, crafted in Indiana.
This massive showpiece is mounted on a trailer with four wheels and stretches an impressive 26 feet in length, weighing in at 8,000 pounds. Built by Matt Messer of Cotton Gin Smokers, the design combines versatility, power, and old-world craftsmanship.
The smoker features not one but two 500-gallon smokers, a Texantinian grill for live fire cooking, a dedicated firebox, a pizza oven, and even a deep fryer, making it one of the most versatile outdoor cooking machines we’ve ever seen.
Messer, who personally oversaw its construction, admitted it was tough to see the smoker leave his shop. “I wished it was mine,” he joked. “I even threatened to keep it and cried when Frank pulled it out of the parking lot.”
With its unique capabilities and commanding presence, Frank’s Cotton Gin Smoker isn’t just a piece of equipment – it’s a rolling culinary powerhouse built for serious cooking and unforgettable gatherings.

Understanding and manipulating the pH of ingredients can significantly enhance cooking. Acidic ingredients such as lemon juice and vinegar can brighten dishes and tenderize meat, while alkaline conditions accelerate the Maillard reaction, creating deeper flavors and colors. Alkaline processing is also used in food manufacturing to improve texture and nutritional value.

Silvio Anichini and his two brothers emigrated from Italy’s Tuscan region in 1920 and in 1925 established a small grocery store in River North. They quickly earned a reputation for quality meat and impeccable customer service.
They experienced the usual ups and downs that most companies went through during the Great Depression. But things changed drastically in 1943, when Ike Sewell and Ric Riccardo, owners of Pizzeria Uno, met with Silvio seeking a special kind of sausage recipe for their new creation, deep-dish pizza. The new style of pizza took off in popularity and so did the reputation of Anichini Brothers Wholesale Meats. Soon the company was selling its sausage and other products to many well-known pizzerias including Pizzeria Duo, Gino’s East, Lou Malnati’s, Edwardo’s, Giordano’s and Nancy’s.
In the early 1970’s, Silvio handed over the reins to his son-in-law, Salvatore Gaddini. Over time, the company expanded its offerings to include premium cheeses, tomatoes, flour, oils and other essential pizza ingredients, catering to the evolving needs of its growing customer list. In the early 2000’s the third generation, which included Salvatore’s two sons and two daughters, took over the helm.
“We’re extremely grateful to those who have gone before us and dedicated their lives to the Anichini legacy,” said Lisa Lendy, President / CEO of the company. “With God’s help, the company has made it through depressions, recessions, wars and epidemics,” Lendy said.
The company still has its very first customer, the Italian Village, and they helped Dick Portillo get started in his first hot dog stand in Villa Park. Lendy estimates the company has helped feed more than one billion people. “And that’s just the first 100 years,” she said. “We can’t wait to see what the future holds.”

Chesterfield Awning Company, a locally based leader in the awning industry for more than 65 years, reports that many municipalities, villages, and cities are now offering rebate programs and grant funds to help business owners improve or rehabilitate their building facades.
In many cases, these programs cover up to 75% of the cost of a new awning project as part of broader efforts to beautify and revitalize commercial areas. Funding often comes from national initiatives designed to strengthen both small communities and larger cities.
Business owners are encouraged to check with their local chamber of commerce, village or city hall, alderman, or elected officials to learn what programs may be available in their area. These dollars can significantly reduce out-of-pocket expenses while enhancing curb appeal and attracting more customers.
For more information and to see if a facade rebate is available for your business, contact your local municipality or call Chesterfield Awning directly. You can find their ad on page 14.

March Equipment, part of CES Family of Companies (CES), a leading supplier of equipment, supplies and services is proud to announce key leadership changes designed to strengthen operations, enhance vendor partnerships, and accelerate growth across the organization. They are excited to announce that Anthony DeBartolo has been promoted to General Manager of March Equipment. Anthony brings extensive sales experience, a proven track record of growth, and a passion for mentoring future leaders. In his new role, he will oversee daily operations and drive sales growth while continuing to guide and mentor newer sales representatives across the CES Family of Companies.
Steve Lewis, who has been an integral part of March Equipment’s success for decades, will transition out of his role as General Manager while taking on a more focused and flexible position. He will continue to lead purchasing of used equipment, allowing him to stay engaged with March while enjoying a more relaxed role. Steve’s expertise and dedication have been foundational
to March’s success, and they are grateful for his continued involvement in this capacity.
In addition, Marc Victor has been promoted to Director of Equipment Purchasing for the CES Family of Companies. Marc will now oversee equipment vendor relationships, negotiate discount programs, and support large project management across CES. Since joining the company earlier this year, Marc has already proven to be a valuable asset, leveraging his deep knowledge of vendor partnerships to deliver buying advantages and strategic growth opportunities across the entire CES family.
“These leadership changes position March Equipment and CES for long-term growth,” said Tyler Jeffrey, CEO of CES. “By aligning our leadership strengths across sales, purchasing, and vendor management, they are ensuring that every part of the company benefits–from our customers and vendor partners to our employees and the communities they serve.”

There was a time when restaurant owners joked, “I know I’m getting ripped off by my employees, but as long as they leave me enough, it’s fine.” Nobody would dare say that today. Margins are tighter than ever, and guests are dining out less frequently – often choosing delivery, carry-out, or pickup instead. In this environment, filling seats takes more than great food; it takes smart, consistent marketing. The most cost-effective tools available to operators are social media and local cable TV. Social media in particular is the low-hanging fruit. It’s fast, free, and flexible, and it keeps
your restaurant top of mind. Post photos of daily specials and desserts, celebrate your staff, highlight loyal customers, and remind guests about birthday clubs, special promotions, or anniversary packages.
By building this steady stream of visibility, you remind people why they love your restaurant and give them reasons to come back more often. In today’s competitive climate, ongoing promotion isn’t optional – it’s survival. The restaurants that keep talking to their customers will be the ones that keep their doors open.
C&S Wholesale Grocers, LLC announced the completion of its acquisition of SpartanNash Company (“SpartanNash”).
The combined company employs more than 30,000 team members and operates almost
60 complementary distribution centers covering the U.S. and serves close to 10,000 independent retail locations, as well as military commissaries and exchanges, with more than 200 corporate-run grocery stores.
Restaurant Technologies is a leading provider of automated kitchen solutions, best known for its Total Oil Management system. The company partners with restaurants, convenience stores, and foodservice operators nationwide to improve employee safety, operational efficiency, and food quality through automated cooking oil handling. Instead of manually transporting, filtering, or disposing of hot cooking oil – a process that is labor-intensive and hazardous – Restaurant Technologies installs a closedloop system that delivers fresh oil directly to fryers and removes used oil automatically. The company’s Chicago Depot in Des Plaines services the region storing fresh cooking oil waiting to be delivered to local customers as well as waste oil waiting to be removed for recycling. – See their ad on page 13
In today’s competitive protein market, success often comes down to one key factor: consistency. Having a partner who can deliver fresh poultry, beef, pork, and seafood with a 99% fill rate makes all the difference in controlling costs, saving labor, and building customer trust
One company excelling in this area is Wheeling, Illinoisbased Fox Deluxe Foods. For more than 27 years, Fox Deluxe has been receiving, distributing, and further processing proteins while helping restaurants, butcher shops, and grocery stores grow from one location into strong, growing enterprises. Known not only as a trusted distributor of top brands, Fox Deluxe also operates a poultry processing plant that hand cuts chicken to the highest standard and is Halal certified.
Fox Deluxe has built a loyal following thanks to their high-touch customer service, knowledgeable staff, and professional drivers. Their determination to see customers succeed sets them apart from vendors who only move product. As a family-owned business, they take pride in going the extra mile to deliver quality, reliability, and support.
For protein buyers, choosing the right partner directly impacts profitability, labor efficiency, and guest satisfaction. Fox Deluxe Foods continues to prove that consistency, service, and customer success are the true ingredients for long-term growth.
In today’s restaurant climate, where customers are spending less and often choosing the comfort of home over dining out, the question isn’t just what’s on the menu. It’s how do we make them want to come in at all? The answer lies in something that costs absolutely nothing: warm, genuine hospitality.
Unfortunately, too many employees in our industry today are disengaged. Guests are met with blank stares instead of smiles, no acknowledgment when they walk in, and awkward exchanges at the register. For many customers, it feels less like dining out and more like dealing with “The Walking Dead.” That indifference pushes them away and in times like these, we can’t afford to lose a single guest.
Owners and managers: this is where leadership matters. You set the tone. You cannot expect employees to be gracious hosts if you don’t model it, teach it, and hold them accountable for it. Make hospitality part of the culture. Reward employees who extend warmth and care. Correct those who don’t. If someone clearly isn’t cut out for a peoplecentered industry, don’t keep them on staff hoping they’ll change, because they won’t.
The restaurants that will thrive in the years ahead won’t just be the ones with the best food or the lowest prices. They’ll be the ones where customers feel welcomed, appreciated, and treated with dignity. Hospitality is the edge that no competitor can take from you, and it’s the one thing your guests will remember long after the meal. So lead by example. Insist on grace. Teach kindness. Because at the end of the day, our industry doesn’t rise or fall on food alone, it rises and falls on hospitality.
Texas grocery chain H-E-B has tapped COO Roxanne Orsak to be its next president, effective in January. Orsak will replace Craig Boyan, who is retiring at the end of 2026 after serving as president of H-E-B since 2010. Orsak, who will be H-E-B’s first woman president, joined the retailer in 1988 as a store management trainee.

The “dirty soda” trend, started by Swig in Utah in 2010, has revitalized the beverage industry by inspiring companies such as PepsiCo and McDonald’s to create new products. Dirty soda, which combines soda with flavored syrups and cream, has become widely popular, appearing in grocery stores and quickservice chains. Swig has expanded to more than 140 units, and Pepsi is set to launch new ready-to-drink dirty sodas. The trend has helped reverse declining soda consumption in the US, attracting younger consumers and increasing sales for beverage companies. – Source: CNBC
